a.m. (BTZ) in Biarritz: refined dining near Les Tourelles
The former Pim’pi restaurant, which we previously featured on this blog, has now become a.m. (BTZ). It remains at 14 Avenue de Verdun, only a two-minute walk from Les Tourelles, so we were naturally keen to discover this new restaurant.
We are very pleased that we did.
Creative contemporary French cuisine
AM (BTZ) offers a deliberately concise menu that changes with the seasons. The cooking is refined without being overly formal, combining carefully selected ingredients with some original flavours and textures.
We chose two very different main courses.

The hake fillet was served with a pepper, tomato and strawberry sauce, wok-fried vegetables, coriander crumble and a pepper and strawberry condiment. The combination may sound adventurous, but the flavours were beautifully balanced and complemented the fish extremely well.
The duck breast came with a raspberry and hibiscus condiment, tender vegetables and a confit potato. The fruit added an original and delicate contrast without overpowering the flavour of the duck.
Truly exceptional desserts

The desserts were undoubtedly one of the highlights of our meal. The chef originally trained as a pastry chef, and this is evident in both the presentation and the precise combinations of flavours and textures.
Our first dessert featured poached apricots, pistachio namelaka, verbena ice cream and foam, pistachio streusel and a verbena-apricot gel. It was fresh, delicate and perfectly balanced.
We also tried the restaurant’s signature chocolate dessert: cocoa biscuit and feuilletine, dark chocolate and Kampot pepper namelaka, vanilla foam, chocolate sauce, a cocoa-nib tuile and vanilla espuma. Rich, intense and beautifully executed, it was a wonderful way to finish the meal.
Our verdict on AM (BTZ)
The welcome was another very positive part of the experience: warm, friendly and professional throughout the evening.
With its inventive cooking, carefully prepared dishes and outstanding desserts, AM (BTZ) is a restaurant we are very happy to recommend to guests staying at Les Tourelles.
Its location is another major advantage. Guests can walk there in approximately two minutes, making it an excellent choice for a special dinner in central Biarritz without needing to drive.
